We also highly recommend using freshly roasted beans. That's because fresh beans contain less moisture than stale ones, which means that they'll produce better results when ground.
Store beans in their original packaging. We recommend keeping beans stored at room temperature away from direct sunlight.

To determine the age of your beans, look at the date printed on the bag. Beans that are older than six months tend to taste bitter.
Keep your beans in a cool, dry location. Ideally, store them in a dark area where temperatures stay around 60 degrees Fahrenheit.
When you open the package, check the color of the beans. Darker colors indicate that the beans are older. When this happens, you should discard them.
